Deviled eggs are perfect as an appetizer, snack, or lunch. These Tuna Deviled Eggs are flavorful and creamy, with a crunchy texture from the celery and cucumber.
Whipping hard-boiled eggs doesn't take a lot of time or effort, and it's really hard to go wrong because eggs are so good to start with. I have made many different variations for many occasions over the years and still enjoy playing with the flavors.
You probably already have most of these ingredients in your stock. The filling is flavorful and creamy, with a crunchy texture of celery and cucumber. Tuna pairs beautifully with eggs, and fresh herbs add a happy glow to the whole group of pantry staple flavors.
If you're not a fan of tuna, there are plenty of other options. My other favorites are the caramelized onions with bacon and/or sautéed mushrooms. Absolutely amazing pairing. Deviled eggs are also great for lunch the next day. Or as a midnight snack :).

Some Tips for Deviled Eggs
- Plan ahead when making deviled eggs. Fresh eggs are much more difficult to peel. If possible, buy a carton of eggs a week in advance so they can "age" a bit.
- Sometimes it helps to peel the eggs under running water or to fill a container with water and peel the eggs under running water. At least that works for me :).
- I don't know if that's true or not, but I've heard that you should put the egg carton on its side so the yolk is better centered. I try it at night before I boil the eggs.
Peel the eggs and cut them in half lengthwise.
Remove the yolks and place them in a medium bowl. Mix the egg yolks, mayonnaise and yogurt with a whisk until smooth. (You can also use a potato masher or fork.)
Add mustard, sriracha or hot sauce, garlic powder, and paprika. Use any spice you like here. Beat again until smooth.Shred the tuna with a fork. (I used half a 7-ounce can of tuna in olive oil.)
What can you use instead of tuna?
Instead of canned tuna, you can use boiled chicken, crab meat, boiled shrimp, or even ham. You can also replace it with whatever spices or herbs you like. As I mentioned earlier, bacon, caramelized onions, and sautéed mushrooms also taste great in deviled eggs.
Add celery, cucumber, tuna, herbs, salt, and pepper. (I didn't add salt to mine, but you'll have to see if it's necessary.) Mix to match.
Taste the filling and add more or less ingredients at your discretion. Place the yolk filling in a ziplock bag and cut off the corner. Place the filling in the center of the egg whites.You can of course also simply spoon the filling into the egg white. Garnish with more tuna flakes and chives.

In fact, the truth about centered yolk is that when the egg is fresh it will be centered, when older it will be on its side. We learned that in food class at my university... the same thing happens with fried eggs... when they are old the whites are very runny, when they are fresh they stay close to the yolks :))olgak7
